Do you need any special ingredients to make this Chocolate Brownies recipe?

These Chocolate Brownies are really simple to make, so don’t worry if you’re new to baking!

You’ll need some Choc Shot. It’s made by a company called Sweet Freedom, and you can get it in most supermarkets in the free from aisle or by the hot chocolate. It’s a low sugar chocolate sauce that’s almost a syrup. We always have a bottle in the cupboard, and it makes a great hot chocolate. You can even experiment with their other flavours like spiced orange or coconut!

It’s really important that you use self-raising flour and not plain flour as this helps with the rise. It’s also important to make sure you use baking powder and not baking soda.

How do you know when these Chocolate Brownies are cooked?

These Chocolate Brownies should be slightly risen, with a little gooeyness in the middle. They won’t be quite as sticky as a full calorie version but they’re still really tasty.

It’s best to under cook these brownies just a tiny bit, and leave them to cool in the tin. This carries on the cooking process so they’ll be just perfect!

Cook them for 16-17 minutes in the oven.

How long can you keep these Chocolate Brownies?

Store these brownies in an airtight tin. They will keep for 3-4 days.

If you find they’re a little stale, pop into the microwave for 10-20 seconds to freshen up.

Can I freeze Chocolate Brownies?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

We have just made these and if I’m honest, they don’t really have a taste? I followed the recipe exact but did take them out of the oven earlier!

Reply

    LisaWednesday 10th February 2021

    Hi, Jorgia
Not sure what has gone wrong. Did you use proper cocoa powder as per the recipe and not drinking chocolate? Some people do confuse them.

Hi I loved the taste of these but they had a bit of a rubbery texture, I baked them for exactly 17minutes in the oven. Should I try taking them out of the oven slightly earlier?

Reply

    HollyMonday 25th January 2021

Hi Megan, These brownies only need mixing for 2 -3 mins or they may be rubbery once baked. We use a fan assisted oven for all of our recipes but ovens do vary a little so if your brownies are cooking too quickly lower the temperature slightly and cook it’s best to under cook these brownies just a tiny bit, and leave them to cool in the tin. This carries on the cooking process so they’ll be just perfect!

FAQs

What is the toothpick rule for brownies? ›

To test for doneness with a toothpick, insert a toothpick into the center of the brownies and pull it back out. For fudgy brownies, you'll want to see some moist crumbs attached to the toothpick when you pull it back out. If it looks like it's covered in brownie batter, the brownies will need to bake a bit longer.

Should you beat brownie batter? ›

If you prefer fudgy brownies, mix until the wet and dry ingredients are just combined. Overmixing allows more air into the batter, which will give you lighter, cake-like brownies instead of dense, rich ones. (On the flip side, if you do want your brownies to be cakey, beat the eggs more.)

How to pimp brownies? ›

Add a teaspoon of instant coffee or espresso powder. Throw in a handful of nuts—pecans, walnuts, macadamia, whatever you have on hand. Scoop in a palmful of dried or frozen fruit. Add an extra splash of the top-shelf vanilla extract, or a dab of vanilla paste, or a dash of vanilla powder, to the batter.

How long should you let brownies sit? ›

Room Temperature Cooling: Allow your brownies to cool at room temperature on the wire rack for at least an additional 30-60 minutes. This gradual cooling process helps to achieve that coveted fudgy texture without becoming a gooey mess.

Are brownies supposed to be wet in the middle? ›

If the brownies still look wet or aren't pulling away, they aren't done. Even fudgy brownies will pull from the edges once they've finished baking. You'll see that the edges look dry while the middle still looks soft or slightly wet. Chewy and cakey brownies will have dry edges with firmer-looking centers.

Should you let brownie batter rest before baking? ›

Because most brownie recipes call for eggs, the batter shouldn't sit out for longer than two hours before baking. On the other hand, the sauce and dry ingredients can be made a few days in advance and refrigerated for freshness.

What happens when you add extra eggs to brownies? ›

They give brownies a lighter, drier, and more cake-like texture. If you prefer this over the chewy variety, then go ahead and crack in that additional egg. On the other hand, too many eggs will yield brownies that are hard, heavy, and tough.

Should I refrigerate brownie batter before baking? ›

The Oregonian relays cookbook author Alice Medrich's advice on her tried and true method of achieving a wonderful, shiny brownie top: chill your brownie batter. Medrich's trick is to refrigerate the prepared brownie batter overnight and up to three days before you bake it.

What can you add to boxed brownie mix to make it better? ›

The first and easiest upgrade you can give to your boxed brownie mix is to add a tablespoon of instant coffee to the batter. Adding coffee to your brownies boosts their flavor because its bitter quality balances out sweetness, making it less overpowering. It allows that delicious chocolate flavor to really shine.

What can I add to brownies to make them better? ›

I liberally grease the pan with cultured salted butter, then when adding eggs short an egg white. For example, if the box calls for 2 eggs I add one whole egg and one egg yolk. This makes for dense, very fudgy brownies with great chew, which is what I prefer.

Is Duncan Hines or Betty Crocker better for brownie mix? ›

If you like chewy, sticky brownies, I recommend: Betty Crocker Dark Chocolate Brownie Mix. If you like light, less dense brownies with a picture-perfect sugar top that flakes when sliced, I recommend: Duncan Hines Chewy Fudge Brownie Mix.

Is it better to use milk or water in brownie mix? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

How to jazz up box brownies? ›

Add nuts – Add a handful of finely chopped pecans or walnuts if you love brownies with nuts. Add mix ins – Jazz up a basic brownie mix with chopped mini peanut butter cups, white chocolate chunks, or your favorite chopped up candy bar. Add a swirl – Swirl in spoonfuls of peanut butter or Nutella before baking.

What is toothpick etiquette? ›

If you have something stuck in your teeth that you can't dislodge and must use a toothpick, excuse yourself to the restroom so you can clear it away in relative privacy. Or wait until you've finished your meal and use the toothpick in your car.

How do you check if brownies are done without toothpick? ›

Our Favorite Alternative to Toothpicks

Look at your knife set and find the one with the thinnest blade. Then insert the blade into the center of the cake. If the knife comes out clean, the cake is done. If batter or crumbs stick to the blade, let your cake bake a few minutes more and retest with a clean knife.

Should you use a toothpick more than once? ›

Repeated use of toothpicks can wear away protective enamel causing the root to become exposed or even cause dental work like fillings to become dislodged, potentially resulting in pain and some hefty dental bills.
