Wrapping each in tin foil before freezing means that your hungry family is able fend for themselves after a big practice or long day.

1. Over medium-low heat, add refried beans to a skillet on the stove to heat them thoroughly. Stir occasionally.

2. Now we add them to your flour tortillas. Once heated, spread an even layer of refried beans in the center of the tortilla.

3. If you want to keep it as close to the taco bell menu items as possible, sprinkle in some onions (we like to use yellow onion), shredded cheddar, pepper jack cheese, or monterey jack cheese, taco bell red sauce (here’s our copycat recipe) and fold your flour tortilla and eat.

Serve with a side of Mexican rice (or brown rice or white rice), your favorite vegetable, and you’ll have a full on meal.

Variations

We all love variations, right? Here are a few ways you can customize your burritos.

  • Top with your favorite toppings. You can add them to the inside of the flour tortilla, or serve them on top. Some of our favorites include sour cream, salsa, guacamole, tomato, chicken, lettuce, and even nacho cheese sauce. It’s your burrito – eat it the way you want to!
  • Turn it into a burrito supreme! Add ground beef and/or black beans. You could even make a Crunchwrap Supreme!
  • Rather than fold your tortilla, keep it flat and add another layer to make a layer burrito. You eat it with a fork and knife open-faced. It’s delicious and filling!

Refrigeration and Freezing Instructions

Store in an airtight container in the refrigerator for about a week. You’ll want to reheat in the oven or over low heat on the stove.

If you are going to freeze these mini-masterpieces, we recommend adding the red sauce in between two layers of beans – to keep the tortilla from getting soggy in the reheat! Then, individually roll each burrito up in your tin foil! Will keep well for 2-4 weeks.

  • 1 Can Refried Beans
  • 1/2 C Chopped Onions (optional)
  • 1 tsp Extra Virgin Olive Oil
  • 1 Cup Shredded Cheddar Cheese
  • 5 Large Flour Tortillas
  • Taco Bell Copycat Red Sauce

Instructions

  1. Heat refried beans in a small saucepan or in a microwave safe bowl.
  2. Chop onions and saute them over medium heat until soft.
  3. Spread about ½ cup of beans on a tortilla, sprinkle onions (about 1 TBS per tortilla) and add cheese to the top.
  4. Add red sauce and roll up!
