This easy roast turkey breast with fresh rosemary and thyme, is so moist and delicious! Make it for a healthy weeknight dinner, or for the holidays when you’re not cooking for a crowd.

Ingredients

  • 1.5 pound turkey breast , boneless, skin on
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • Sea salt
  • Fresh ground black pepper

Instructions

  • Preheat oven to 350 degrees Fahrenheit

  • Place turkey breast, skin side up, on a shallow baking dish or roasting pan. Drizzle with olive oil, and cover with chopped herbs, salt, and pepper. Spread mixture on both sides, and underneath skin.

  • Place turkey in oven, and roast until the skin is golden brown, and thermometer reads 165 degrees F in the center of the breast. Remove the turkey at ~ 20 minute intervals to baste with drippings.

  • Remove turkey from oven when it is done, cover it with aluminum foil, and allow to cool for 10-15 minutes before slicing and serving.

Notes

Your cooking time and number of servings will depend on the size of your turkey breast. I used a half turkey breast which took about 45 minutes to reach 165 degrees F, and yielded 1 1/2 pounds of cooked turkey meat.
