Can I bake paneer instead of frying? You bet! Paneer cubes cooked in the oven are a healthy alternative to fried paneer on the stovetop.

Paneer cheese is like halloumi cheese in that it stays firm, and doesn’t melt in the oven. That means you can make a paneer bake with chunks of paneer that stay intact. You can also season the paneer, and roast it into a crisp snack.

Paneer doesn’t have much flavor by itself. Thus, spicing and roasting paneer is a great way to add another layer of flavor to your Indian recipes. I have lots of ideas for you below on how to use baked paneer.

But first, let’s talk about how to make this recipe!

😋 Baked Paneer Recipes

You could also substitute the seasonings in this recipe for garam masala or tandoori seasoning, and use the paneer in a tandoori paneer sandwich or tandoori paneer pizza.

How to Keep Paneer from Sticking

We’re using parchment paper in this recipe to keep the paneer from sticking. You can also use a silicone baking mat, though the paneer might not get as crisp. Make sure whatever cookie sheet liner you use is heat resistant to 425F or higher.

The paneer is more likely to stick to foil. If you try to use foil, you may want to spray it with cooking spray first. You may also want to shorten the cooking time, and loosen the paneer from the sheet with a spatula after cooking.

If you want to know how to fry paneer without sticking, make sure you’re using enough oil in the skillet. You could also try air frying paneer, since most air fryers have a nonstick basket or tray.

️🌡️ Does paneer reheat well?

Yes, paneer reheats well in the microwave. Microwave for 10 seconds on high, and check on it in 10 second intervals until heated through. Paneer lasts in the fridge for up to 3-4 days if covered in plastic wrap or kept in a covered container.

Can cooked paneer be frozen?

Yes, you can freeze cooked paneer, though the texture may be different when thawed. Wrap paneer in plastic wrap or place it in a freezer bag with the air pressed out to prevent freezer burn. Thaw frozen paneer in the refrigerator for 24-48 hours.

💭 Expert Tips from Dietitian Summer Yule

This is a level 2 recipe (transition or weight maintenance). Is roasted paneer healthy? Paneer is a vegetarian protein option, and can be included in a heart-healthy diet. As always, what’s a “healthy food” depends on the needs of the person eating it.

Who should not eat paneer? Those with dairy restricted diets, such as those with a milk allergy, should not eat paneer. Paneer is low in lactose, and may fit the diet of some with lactose intolerance.

Paneer is cheese, so it’s not a lean protein. Though not a low fat protein option, paneer does provide a variety of benefits. For example, it provides the antioxidant vitamin A, as well as essential minerals such as calcium and phosphorus.

Paneer tends to be a crowd-pleaser that’s accepted by picky eaters. If you need something that can feed everyone from vegetarians to keto dieters, paneer is a great choice. I’d love to see paneer become more reliably available in mainstream supermarkets in the US.

FAQs

Does paneer melt in oven? ›

Paneer is a non-melting cheese. Since paneer is made using heat and acid, instead of rennet, to curdle the milk, it changes the way the milk proteins are bound together. When paneer is heated, it doesn't melt, but holds its shape, allowing it to be simmered, fried or grilled without liquefying.

Does paneer need to be fried? ›

Do you have to fry the paneer? Absolutely not! The thing is, raw paneer has a tendency to fall apart when added to a sauce. By frying the cubed paneer, you create a crispy crust to the cheese which helps it retain its shape when cooked into a hot curry sauce.

Should paneer be soaked before cooking? ›

Softening the paneer prior to cooking prevents that unwanted chewy, rubbery texture. Soften it by following the cut, soak, steam, boil or pan-fry softening methods.

Why is my homemade paneer rubbery? ›

Heating dries up the moisture content in the paneer and it makes it hard and rubbery. Hence after frying paneer in oil or ghee, always soak it in warm water for five to ten minutes. Then add the soaked paneer to any gravy of your choice.

Does roasting paneer destroy nutrients? ›

It is also loaded with other nutrients such as calcium, iron and magnesium. Cooking the paneer or roasting it does destroy some nutrition and so it is better to consume it raw.

How to roast paneer without sticking? ›

Oil the pan generously

You can use any cooking oil with a high smoke point like vegetable oil or canola oil. The oil creates a barrier between the paneer and the pan, preventing it from sticking. Consider using a silicone brush or a paper towel to evenly spread the oil across the pan's surface.

Is it OK to eat raw paneer? ›

Paneer is an animal product which is prepared by curdling hot milk using lime juice, vinegar or citric acid. It can be eaten raw as well as to prepare a variety of dishes. There are various types of Paneer such as conventional Paneer, low fat Paneer, soy Paneer, filled Paneer and vegetable stuff Paneer[1][2].

Does frying destroy protein in paneer? ›

Why is restaurant paneer soft? ›

All you need to do is add salt in a bowl filled with warm water and then add the fried paneer chunks. Wait for 7-8 minutes and it's done! Most of the restaurants, cafes and dhabas follow the same technique to make their paneer soft.

Why is my homemade paneer hard? ›

Do not continue to boil after the milk has curdled completely. This makes the paneer very hard & grainy. Use just the right amount of acids to curdle the milk. Using too much of acidic ingredient makes the chenna or paneer grainy and rubbery.

How long paneer should be cooked? ›

Heat a skillet with 1 1/2 tablespoons of olive oil over medium heat. Add the paneer pieces and pan fry for about 3 to 4 minutes, until they are golden brown. Flip the pieces over to pan fry the other side. Cook for another 2 to 3 minutes, until golden brown.

Which vinegar is best for paneer? ›

Add about 2 to 3 teaspoons of white vinegar or apple cider vinegar in 1 litre milk. With vinegar the milk curdles faster and quicker. Curd or yogurt: Fresh curd will give you more softer and moist paneer. You could add about 3 to 4 tablespoons of fresh curd or yogurt when making paneer recipe with 1 litre milk.

Why is homemade paneer bitter? ›

There can be many factors responsible for paneer to taste bitter. If the milk used to make paneer is already spoiled it will result into bitterness. If paneer is kept outside the fridge for long it will get infected with fungus which will give it a yellowish tinch and make it bitter.

Why does paneer become hard after frying? ›

Paneer cooking mistakes: Over cooking paneer, that too in high temperature, may affect the fat molecules in paneer, resulting in its tough and chewy texture. Hence, it is always suggested to cook paneer on medium heat, until it holds the shape.

Is it possible to melt paneer? ›

When melted, some cheeses become stringy and clump, whereas other cheeses will not melt at all. While Mozzarella, a cheese commonly used on pizza, melts to bubbly, gooey perfection, Paneer and Queso Fresco do not melt well at all (Figure 6).

How do you make paneer not melt? ›

When you mix the milk and lemon juice, the acidity in the lemon juice will cause the milk to separate into curds and whey. Remove the whey and press the curds, and you have a simple, basic cheese. This cheese won't melt or get gooey the way mozzarella or cheddar will, but with paneer, this is actually an advantage.

Will paneer melt in sauce? ›

This versatile cheese can be cooked and used in a variety of ways. The lemon used when making paneer means it doesn't melt when adding it to sauces such as curry, making a perfect meat alternative. Simply chop up your paneer into cubes and add to your curry sauce.
